Cinnamon-Sugar Muffins
Today I'm thankful for...
12. muffin tops. The kind you eat not the kind that are currently spilling over my pre-preggo jeans.
Wet ingredients:
3/4 cup of milk
1/2 cup of melted butter (you can substitute oil or applesauce)
1 egg
Dry ingredients:
2 cups flour (apparently real bakers know all kinds of tricks, I just used all-purpose)
2/3 cups of sugar
1 tsp salt (that's teaspoon if you're a newbie like me)
Directions:
Heat over to 400'
Butter bottom of your muffin tin (I used PAM spray because I don't like to get my fingers yucky)
Beat the wet ingredients and add the pre-mixed dry ingredients to your mixer
Stir until the flour is moist but still lumpy
Bake 16-20 minutes. (My oven only needed 15 minutes because it's more powerful than yours)
Remove from pan and immediately add topping

So this morning I'm hosting Playgroup for BabyGirl and her little friends. Don't worry, their momma's will all be there too, I'm not insane! Anyway, we get together every other week and chat over coffee and yummies. I decided that since I'm a mother now I should be more domestic and learn to bake. I've been trying out some recipes from scratch and thought I'd share one with y'all. My husband thinks they're fantastic but we'll have to wait for the ladies to chime in on the final verdict.

Topping:
1/2 cup of melted butter (that's another whole stick y'all-you know it's gonna be good)
1/2 cup of sugar
1 tsp cinnamon
Dip the warm muffin tops in butter and then roll them around in the cinnamon sugar
I melted the butter for both the muffins and the tops separately and for 60 seconds in the microwave
You obviously mix up the cinnamon and sugar and place in it's own bowl
Perfection!!!
Seriously, can we talk about the butter that's dripping down the sides.
I wish I could remember where I found this recipe, it was online somewhere so please help me out if you recognize it so I can give proper credit!
UPDATE: Okay, so they're perfect with coffee!
They're a little bit more donut like than muffin like but in a good way. The middle isn't too sweet either so it doesn't just taste like desert.
